Summer Veggie Bake

Try this micronutrient packed and macro friendly veggie dish for your next party or meal prep!

Ingredients:
2 Yellow Squash
2 Zucchini
1 Large Tomato
2 large or 3 medium white potatoes
Shredded cheese of your choice (I used colby jack)
Slice veggies into thin, equal slices and layer into 9"x9" casserole dish. Bake on 425 for 35-45 minutes or until vegetables are tender. Makes about 8 servings.
